Cooking Directions :

  • Prepare 500g fish, clean, gutted then slits on both sides. 
  • Smear with 1⁄2 tsp salt and 4 tbsp lime/lemon juice for 15 minutes then wash again. 
  • Smear fish and the cavity with 80g (4 tbsp) of this seasoning adequately. Add fresh lemon basil leaf and chili pepper. 
  • Wrap fish with banana leaf / aluminum foil. Steam for 30-45 minute, then grill for 10 minutes (optional). 

     

    Tip : Substitute fish with chicken / firm tofu / mushroom. Add extra seasoning paste for chicken, and less seasoning paste for tofu / mushroom.
